We went yeast hunting in the underground cellars of Cincinnati. A scientific “needle-in-the-haystack” produced a real, authentic, surviving sample of brewers yeast living inside of an abandoned, historic wooden brewing vat in a 150-year-old lagering tunnel.
We tested, cultured, and brought this ancient yeast strain back to life, and it is currently fermenting away in two oak barrels of delicious new beer.
